My favorite chocolate chip cookies
PREP TIME: 10 minutes | COOK TIME: 8-9 MINutes | SERVINGS: 2 1/2 dozen
1.Preheat oven to 350. Line a baking sheet with parchment paper and set aside.
2. Using a stand mixer or hand held, cream together butter and sugars in a mixer until light and fluffy (about 3 minutes). Add egg and vanilla. Mix well, scraping down the sides of the bowl with a spatula as needed.
3. In a separate bowl add the flour, cornstarch, baking soda and salt. Stir to combine. Slowly add the flour mixture to the butter and sugar mixture. Mix until just blended. Don’t overmix.
4. Stir in chocolate chips.
5. Drop one tablespoon of dough onto baking sheet. Sprinkle each cookie with a tiny pinch of maldon salt. Bake 8-9 minutes until barely golden brown. Don't over bake! They will still continue to cook on the baking sheet while cooling.
6. Let cool on baking sheet for 5 minutes and then transfer to cooling rack. Store in airtight container for 5 days.
