Roasted Grape Crostini

Ingredients

2 cups seedless red grapes

1 tablespoon avocado oil (or olive oil)

2 tablespoons balsamic vinegar, divided

Salt and pepper to taste

½ teaspoon crushed red pepper

1 loaf ciabatta bread, sliced ½ inch thick

5 ounces goat cheese

3 tablespoons olive oil

2 cloves garlic, minced

1 tablespoon fresh chives, minced for garnish

PREP TIME: 10 minuteS | COOK TIME: 45 minutes | SERVINGS: 8-10

1.Preheat oven to 325.

2. Pour grapes into a 9x13 casserole dish. Add the avocado oil, 1 tablespoon balsamic vinegar, crushed red pepper, salt and pepper. Toss to coat. 

3. Roast in oven for 45 minutes stirring occasionally. Remove from oven, drizzle remaining tablespoon balsamic vinegar and set aside to cool.

4. In a large sauté pan heat the olive oil over medium heat. Add the garlic and bread slices. Cook for 2-3 minutes on each side until golden brown. Remove and set on paper towels.  (Do in multiple batches if needed. If any garlic burns, remove from pan)

5. Spread 1 teaspoon  of goat cheese onto each piece of bread. Top with a tablespoon of roasted grapes and garnish with fresh chives. Serve immediately.
