Artichoke + Goat Cheese Crostini

Ingredients

1 loaf ciabatta bread, sliced ½ inch thick

3 tablespoons olive oil

2 cloves garlic, minced

1 (5 oz) garlic and herb goat cheese log, room temperature  

1 can artichoke hearts- drained, rinsed and chopped

juice of ½ lemon

salt and pepper to taste

1 tablespoon fresh chives, minced, for garnish

PREP TIME: 15 MINutes | COOK TIME: 10 minutes | SERVINGS: 8-10

1. Preheat oven to 375. Line a baking sheet with parchment paper and set aside.

2. In a large sauté pan heat the olive oil over medium heat. Add the garlic and bread slices. Cook for 2-3 minutes on each side until golden brown. Remove and set on paper towels.(Do in multiple batches if needed. If any garlic burns, remove from pan).

3. In a small bowl mix together the goat cheese and chopped artichokes. Add in the lemon juice, salt and pepper to taste, mixing well.

4. Spread one tablespoon of the mixture onto each slice of bread. Bake for 10 minutes or until the cheese mixture is heated through. Garnish with chopped chives. Serve immediately.
