Shrimp + Avocado Bites

INGREDIENTS

Shrimp : 

1/2 pound shrimp, peeled and deveined

1 teaspoon Cajun seasoning

1/2 teaspoon salt

fresh cracked pepper to taste

1 tablespoon butter

Quick guacamole :

1 avocado

juice of 1 lime

salt to taste

1 large cucumber, sliced 1/4 inch thick

fresh cilantro for garnish 

Remoulade: 

½ cup dukes mayonnaise

1 clove garlic, minced

juice of ½ lime and zest

1 teaspoon paprika 

1/2 teaspoon old bay seasoning

PREP TIME: 15 MINUTES | COOK TIME: 10 MINUTES | SERVINGS: 10-12

1. Heat a skillet to medium high heat.

2. Toss the shrimp with the Cajun seasoning, salt and pepper. Add the butter to the pan and then add the shrimp. Cook for 2-3 minutes on each side or until shrimp are cooked through.  Remove from skillet and set aside. 

3. In a small bowl mash the avocado. Add in the lime juice and salt. Set aside.

4. In another small bowl mix together the mayonnaise, garlic, lime juice and zest, paprika and old bay seasoning. 

5. To assemble, take one cucumber slice, add a tablespoon of guacamole, place one shrimp and a small dollop of the remoulade. Garnish with fresh cilantro and serve immediately.
