Fresh Peach Scones + Vanilla Thyme Glaze
PREP TIME: 20 MINUTES | COOK TIME: 8-10 MINUTES | SERVINGS: 1 dozen
1. Preheat oven to 400. Line a baking sheet with parchment paper and set aside.
2. In a small bowl, whisk together the egg, cream, sour cream and vanilla. Set aside.
3. Using a food processor, pulse together the flour, baking powder, salt, and brown sugar. Add in the cubed butter and pulse until mixture resembles coarse crumbs. Pour into a big bowl. Add the cream mixture in. Stirring until just combined. Stir in the peaches. Mixture may seem a little dry and that's ok. Pour onto a lightly floured surface. Knead the mixture gently until combined.
4. Using a rolling pin, roll dough into a round disc that is about 1/2" thick. Cut it like you would a pizza- into 8 triangles or use a biscuit cutter and cut into circles.
5. Transfer the scones to the parchment lined baking sheet. Brush the tops with a little bit of cream. Bake for 8 minutes (or more, depends on the size of the scone) or until lightly golden brown and cooked through. Transfer to a cooling rack and let cool completely.
6. While scones are cooling make the glaze. Whisk together the powdered sugar, cream and vanilla. Drizzle over the scones and sprinkle fresh thyme on top.
