Butter Almond Cookies

Ingredients

1 ½ cups (3 sticks) unsalted butter- room temperature 

1 cup sugar

1 cup brown sugar

2 eggs, room temperature 

1 teaspoon almond extract 

1 teaspoon vanilla extract 

2 ¼ cups all purpose flour

1 teaspoon baking powder

¼ teaspoon salt

1 cup finely chopped almonds

PREP TIME: 15 MINUTES | COOK TIME: 8-9 MINUTES | SERVINGS: 4 dozen

1.Preheat oven to 350. Line a baking sheet with parchment paper and set aside.

2. Using a stand mixer or hand held, cream together the butter and sugars on medium high speed for 5 minutes; until light and fluffy.  

3. Add in the eggs and extracts. Mix until blended.

4. In another bowl mix the flour, baking powder and salt. Slowly add the flour mixture to the butter mixture. Mix until just combined. Stir in the chopped almonds.

5. Using a tablespoon cookie scoop, drop the dough 3 inches apart on the baking sheet. (These cookies spread, so don’t over crowd them). Bake for 8-9 minutes or until golden brown. Remove from oven and let sit on baking sheet for 5 minutes. Transfer to a cooling rack and let cool completely.
