Sheet Pan Breakfast

Ingredients

4 sweet potatoes, peeled and cubed (1 per person)

6 slices bacon, cut into bite sized pieces

1 pound mushrooms, cleaned and sliced

6 eggs

3 tablespoons olive oil

Salt and pepper to taste

diced green onions for garnish

chopped avocado for garnish

everything but the bagel seasoning for garnish

Optional add ins:

1 pound brussel sprouts

1 apple 

1 bell peppers

PREP TIME: 15 MINUTES | COOK TIME: 30-ish MINUTES | SERVINGS: 4

  1. Preheat oven to 425.  Line a rimmed baking sheet with parchment paper. 

  2. Toss the sweet potatoes and mushrooms in the olive oil. Arrange in one layer on the baking sheet. Top with the bacon pieces and add salt and pepper to taste.  Bake until bacon pieces start to crisp and potatoes are fork tender; about 20-25 minutes.

  3. Remove baking sheet from oven. Crack the eggs on top of the sweet potato mixture. Place back in oven and bake until the eggs reach your desired doneness. For over medium about 6-7 minutes. 

  4. Garnish with green onions, diced avocado and everything but the bagel seasoning.

  5. Serve immediately.
