Ingredients

2 ripe bananas

2 eggs

1/4 teaspoon baking powder

1 tablespoon butter

Strawberries for topping

Maple syrup

PREP TIME: 5 MINUTES | COOK TIME: 5-10 MINUTES | SERVINGS: 1

1. In a bowl, mash the bananas with a fork; leaving some banana chunks.

2. Add in the eggs and baking powder. Whisk with a fork to combine.

3. Heat a non-stick skillet to medium heat, add the butter. Working in batches- drop about two tablespoons of batter into the skillet. (These pancakes are mini). Cook for about a minute and a half to two minutes on each side or until golden brown.

4. Serve immediately. Top with your usual pancake toppings- butter and maple syrup and fresh fruit. You can also top it with yogurt and honey. What ever you would like!
