Lavender Martini

1. To make the Lavender Simple Syrup: Place water, sugar and lavender in a small saucepan. Bring to a simmer. Let simmer until sugar has dissolved. Remove from heat and let cool completely. Once cooled. Strain into a mason jar (removing the lavender). Refrigerate for up to a month.
2. Fill a cocktail shaker with ice. Add the lavender simple syrup, lemon juice and gin. Shake for 30 seconds and pour into a glass. (Makes 1 cocktail)
3. Serve immediately.
