Funfetti Whoopie Pies

Ingredients

11 tablespoons unsalted butter, room temperature 

1 cup sugar

2 eggs, room temperature 

1 tablespoon vanilla extract 

¼ teaspoon almond extract 

3 cups flour

1 teaspoon baking powder

1 teaspoon salt

2/3 cup whole milk, room temperature 

2/3 cup sprinkles

Buttercream:

2 sticks unsalted butter

4 cups powdered sugar

1 tablespoon vanilla

¼ teaspoon almond extract 

3 tablespoons heavy cream

PREP TIME: 30 MINUTES | COOK TIME: 7-8 MINUTES | SERVINGS: 1 DOZEN

1. Preheat oven to 400. Line a baking sheet with parchment paper and set aside.

2. Using a stand mixer or hand held, beat the butter and sugar on medium high for 3 minutes or until light and fluffy. Add in the eggs and extracts.

3. In another bowl, mix the flour, baking powder and salt together. Add in 1/3 of the flour mixture and 1/2 of the milk. Mix until blended. Add another 1/3 flour mixture and remaining 1/2 of the milk. Mix until blended. Add in the final 1/3 cup flour mixture. Mix until just combined. Stir in the sprinkles.

4. Using a cookie scoop or spoon; place 1 1/2 tablespoons of batter at a time on baking sheet. Bake for 7-8 minutes or until just cooked through. You don't want to over bake these! Whoopie pies are meant to be soft. Let cool on baking sheet for 5 minutes and then transfer to a cooling rack and let cool completely.

5. While cookies are cooling, make the buttercream. Beat the butter for 2 minutes. Add in the powdered sugar, extracts and cream. Beat for an additional two minutes.

6. Frost the flat side of one pie with a tablespoon of buttercream and then sandwich another on top. Roll in more sprinkles if desired.
