Boozy Blackberry Crostini

Ingredients

1 loaf ciabatta bread, sliced ½ inch thick

1 (5oz) goat cheese log

2-3 tablespoons olive oil

2 cloves garlic, minced

2 cups fresh blackberries 

¼ cup bourbon (or water)

1 tablespoon brown sugar 

1 tablespoon cornstarch

pinch of salt and pepper

fresh mint, chopped for garnish 

PREP TIME: 30 MINutes | COOK TIME: 10 MINutes | SERVINGS: 8-10

1.In a small saucepan add the blackberries, bourbon, brown sugar, salt and pepper. Bring to a boil and reduce heat to a simmer. Cook over low heat until the berries begin to burst. About 5 minutes. Carefully using the back of a wooden spoon smash the berries a bit, so they release their juices.

2. Whisk in the cornstarch and continue to cook for another 2-3 minutes. Transfer berries to a bowl to cool. 

3. While the berries are cooling, heat a large sauté pan over medium heat. Add the olive oil, garlic and bread slices. Cook for 2-3 minutes on each side until golden brown. Remove and set on paper towels.  (Do in batches if needed and remove any garlic if it burns)

4. Spread 1 teaspoon of goat cheese onto each piece of bread. Top with a tablespoon of the blackberries and garnish with fresh mint.  Serve immediately.
