Red Velvet Whoopie Pies

INGREDIENTS

Batter:

2 cups all purpose flour

3 tablespoons cocoa powder

1 teaspoon baking soda 

½ teaspoon salt

1 stick unsalted butter, room temperature 

1 cup brown sugar

1 egg, room temperature 

2 teaspoons vanilla

⅔ cup buttermilk, room temperature 

1 teaspoon gel red food coloring

Cream Cheese Buttercream:

1 block cream cheese, room temperature 

1 stick unsalted butter, room temperature 

3 cups powdered sugar

2 tablespoons vanilla

4 tablespoons heavy cream 

PREP TIME: 10-15 MINUTES | COOK TIME: N/A | SERVINGS: 8-10

1.Preheat oven to 350. Line a baking sheet with parchment paper and set aside.

2. In a large bowl mix together the flour, cocoa powder, baking soda, and salt. Set aside. 

3. Using a stand mixer or handheld beat the butter for one minute. Add in the brown sugar and beat for an additional minute. Add in the egg. Mix until blended. Add the buttermilk and vanilla. Mixture will be lumpy. Add in the flour mixture and blend until just combined. Add the red food coloring. Add more if necessary to achieve a deep red color.

4. Using a tablespoon cookie scoop, scoop out batter onto the parchment-lined baking sheet. Bake for 9 minutes or until just set. Let cool for 3 minutes on baking sheet and then transfer for cooling rack. 

5. While cookies are cooling make the cream cheese buttercream. Using a stand mixer or handheld beat the cream cheese and butter together until smooth.  Slowly add the powdered sugar, vanilla, and cream. Beat on medium-high for two minutes. If mixture is too thick add a touch more cream. 

6. To assemble, take one cookie and spread 1-2 tablespoons of buttercream and then sandwich another cookie on top. Sprinkle with extra powdered sugar if desired.
