Healthy Snickers Bars

Ingredients

Base:

1 cup oats

3 tablespoons almond butter

2 tablespoons maple syrup

Filling:

¾ cup pitted dates

½ banana

1 tablespoon coconut oil

1 teaspoon vanilla extract 

Pinch of salt

Topping:

¾ cup chopped pistachios 

1 cup cocoa powder

1 cup coconut oil, melted

2 tablespoon maple syrup 

PREP TIME: 45 MINUTES | COOK TIME: n/a | SERVINGS: 6-8

1.Using a food processor, pulse the oats until they turn into a powder. About 1 minute. Add the almond butter and maple syrup and pulse until combined. 

2. Press mixture into a parchment paper lined 9 inch loaf pan. Place in freezer while you make the filling.

3. To make the filling- soak the dates in boiling hot water for 5 minutes to soften them. Drain the water. Add the dates to a food processor and pulse until smooth. Add the banana, coconut oil, vanilla and salt. Pulse until smooth and combined.

4. Take the base out of the freezer. Spread the filling evenly over the base and place back in freezer for 30 minutes. 

5. Remove the bars from the freezer. Sprinkle the chopped pistachios over the filling and gently press down so they stick.  Remove from loaf pan. Carefully slice into bars width wise.

6. In a bowl whisk together the cocoa powder, coconut oil and maple syrup.

7. Place the bars on wax or parchment paper.  Drizzle the chocolate all over the top of the bars and let sit until chocolate has hardened.  Keep bars in refrigerator.
