Hoisin BBQ Pulled Mushroom Sandwich

Ingredients

4 cups portabella mushrooms, rough chopped

¼ cup green onions, sliced thin

3 cloves garlic, minced

¼ cup hoisin

¼ cup bbq sauce (your fav kind will work)

3 tablespoons olive oil, divided

1 tablespoon sesame oil

1 tablespoon soy sauce 

Salt and pepper to taste

Garnishes (optional but TOTALLY recommended) dukes mayonnaise, thinly sliced cucumbers, thinly sliced onion, diced green onion and sesame seeds

PREP TIME: 20 MINuteS | COOK TIME: 30 MINuteS | SERVINGS: 4-6

1. Preheat oven to 350. Place the chopped mushrooms on a parchment paper lined rimmed baking sheet. Drizzle with two tablespoons olive oil and sprinkle with salt and pepper.  Roast for 20 minutes or until tender.

2. While mushrooms are roasting, heat a skillet to medium heat and add the remaining one tablespoon olive oil.  Add the green onions and garlic and cook for 2-3 minutes. Add the roasted mushrooms to the pan. Add in the sesame oil, soy sauce, hoisin and bbq sauce, stirring to combine. Remove from heat.

3. To assemble the sandwich: bottom bun, mayo, layer of sliced cucumbers and onion, add mushrooms on top. Top with green onion and sesame seeds and then a little more mayo on the top bun.
