Strawberry Poppyseed Pasta Salad

Ingredients

1 pound fusilli pasta, cooked and cooled (or any kind of short pasta)

1 pint strawberries, rinsed and sliced

1 cucumber, sliced paper thin

3 green onions, diced 

¼ cup fresh grated Parmesan 

¼ cup fresh basil leaves, chopped

Poppyseed dressing:

¾ cup mayonnaise 

¼ cup apple cider vinegar

1 teaspoon sugar

1 tablespoon poppyseeds

salt and pepper to taste

PREP TIME: 10 MINUTES | COOK TIME: 10 MINUTES | SERVINGS: 4-6

  1. To make the dressing- in a small bowl add the mayonnaise, vinegar, sugar, poppyseeds, salt and pepper. Whisk until smooth. (You may want to add more vinegar or seasonings).

  2. In a large bowl add the pasta, strawberries, cucumbers, green onions, basil, and parmesan. Pour the dressing over top and stir gently. Adding salt and pepper to taste. Serve immediately.

  3. I also like to add grilled chicken or shrimp to make a complete meal.
