Pizza Gnocchi

Ingredients

1 package gnocchi

1 jar of your favorite marinara sauce 

½ onion, diced

2 tablespoons butter

1 teaspoon dried oregano 

½ teaspoon garlic powder

¼ teaspoon red chili flakes

½ pound Italian sausage, cooked and crumbled

¼ cup pepperoni 

1 pint mushrooms, sautéed 

½ cup sundried tomatoes, chopped

½ cup mozzarella 

Fresh basil for garnish 

Fresh grated parmesan for garnish

PREP TIME: 20 MINUTES | COOK TIME: 20 MINUTES | SERVINGS: 4

1.Preheat oven to 400.

2. Cook the gnocchi according to package directions.

3. While the water is boiling for the gnocchi, prepare the sauce.  Using an oven-safe skillet, sauté the butter and onions over medium-low heat until onions have softened.  Once the onions have cooked add the oregano, garlic, and red chili flakes.  Stir until combined. Add in the marinara sauce and simmer over low heat for 5 minutes.

4. Add the cooked gnocchi to the sauce. Add the sausage, pepperoni, mushrooms, and sundried tomatoes.  Whatever you like on a pizza, add it!  Top with mozzarella cheese and bake for 15-20 minutes or until cheese has melted and is bubbly. 

5. Top with fresh basil and grated parmesan and serve immediately.  Serve with crusty garlic bread if desired.
