Grilled Peach+ Onion + Bacon Salad

Ingredients

6 ripe peaches, sliced 1/2 inch thick

1 large Vidalia or sweet onion, sliced into 1/4 inch rings

6 slices bacon

1 tablespoon brown sugar

1/2 teaspoon cayenne 

1 tablespoon olive oil

1/4 cup ranch (store bought or homemade)

1 tablespoon fresh chives, minced, for garnish

PREP TIME: 10 MINUTES | COOK TIME: 20 MINUTES | SERVINGS: 4-6

  1. Preheat oven to 400. Place a cooling rack on top of a rimmed baking sheet. Place bacon on cooling rack. Sprinkle with brown sugar and cayenne. Bake for 15-20 minutes or until bacon is crisp.

  2. Drizzle the olive oil on top of the peaches and onions. Grill the onions for 10 minutes or until charred slightly and soft. Grill the peaches for 5 minutes or until charred slightly and soft.

  3. Place the peaches and onions on a platter. Crumble the bacon over top. Drizzle the ranch on top and garnish with chives. Serve immediately.
