Baked Avocado Fries

INGREDIENTS

2 avocados, sliced ¼-½ inch thick

2 eggs, lightly beaten

1 teaspoon chili powder

¼ cup flour

1 teaspoon cornstarch

1 cup panko

2 tablespoons olive oil; divided

juice of half lime

salt and pepper

extra lime juice for garnish 

Spicy Ranch:

½ cup ranch dressing (store bought or homemade)

1 tablespoon cholula hot sauce

PREP TIME: 20 MINutes | COOK TIME: 20 MINutes | SERVINGS: 4

1.Preheat oven to 450. Line a baking sheet with parchment paper and drizzle 1 tablespoon of oil on top.

2. Mix together the ranch and cholula and set aside.

3. In three separate shallow bowls, create a dipping station. One with flour, cornstarch and chili powder, one with the eggs and one with panko.

4. Squeeze lime juice all over the avocado slices. Season them with salt and pepper.

5. Dip each slice into the flour mixture and then the egg and then the panko. Make sure they are coated well. Repeat until all slices are covered.

6. Drizzle the remaining tablespoon of olive oil on top and bake for 20 minutes or until crisp and golden brown. Squeeze more lime juice on top and serve with spicy ranch.
